
Although Valentine's Day is still a whole two weeks away, I am already racking my brains over how to surprise my love this year.💕 It struck me that this lockdown is a great chance to try something completely new – something healthy, plant-based, delicious and exceptionally easy to make! Vegan desserts are hardly news, of course, but we make them very rarely at home, so I have no doubt there are more fans of desserts like these who rarely treat themselves to plant-based food. I always held the mistaken belief that vegan food is super complicated to make, fiddly and sometimes even tasteless, but today my opinion has changed completely. I hope yours will too.😉

All you have to do is grind the nuts…

Blend the nut flour with the dates, cardamom and coconut oil…

And line the tart tin with the mixture…

Bring the blended strawberries to the boil with the coconut cream, cornflour, vanilla and agar agar…

And pour it all into the chilled base. AND THAT'S IT. It is that simple!🥧 In an hour you will be enjoying a wonderful vegan dessert.🍓

What's more, the colour palette of this tart is stunning, so almost any decoration will suit the pistachio green and the strawberry pink. The decorating possibilities are absolutely endless!
