Some people may find this strange, but my greatest pleasure is sharing controversial recipes, because they provoke the strongest emotions – and it makes no difference whether those emotions are positive or negative. Emotion is the cornerstone of the whole Hungry Bae project and the factor that decides what my house will smell of today. Emotion is the variable in my equation whose value determines the final result. And it is precisely because today I could tick the box marked „intrigued/curious” on my emotional scale that I tried something different. 🙂 If your emotion today is similar, I invite you to make a fantastic dish; and if you are feeling negative, perhaps it is better to turn that negativity into creative energy and simply cook something more to your liking.🙂

I have already shared recipes forkangaroo salad with yoghurt dressingand kangaroo kebabs with chickpea and quinoa saladwhich met with a great deal of interest, praise and success. Today another exotic dish is steaming on my table – frogs' legs with lemon butter sauce. Since Hungry Bae was born as a counterweight to domestic blogs, you won't find rissoles or „Jūratė” steaks here, but I can promise that kangaroo and frogs' legs are certainly not the end of it. To everyone who, like me, is after the exotic and the new, I can promise recipes with exotica such as ******************sensitive readers look away 😁*********************crocodile, ostrich, wild pigeon or zebra.

Anyway, coming back to today's recipe, I can say it really is worth giving it a chance. The legs themselves come out wonderfully good – soaked in milk they lose that lake/silt smell, coated in seasoned flour they take on an excellent flavour, and fried in butter they get a crisp crust and, in short, melt in your mouth. Lemon butter sauce – an absolute classic with fish and other seafood dishes (yes, yes, frogs may not be seafood, more like lake food 😂, but this sauce really does suit them). As the butter heats it not only takes on a brown colour but also a subtle nutty aftertaste and aroma, which goes perfectly with fresh lemon. You can use this sauce on fried fish (it is best with a thin white fish fillet) and get a „restaurant quality” dish. 🙂 Frogs' legs can be eaten simply with the sauce, or you can prepare your favourite side to go with them. In the photos you can see that I served mine with lightly blanched asparagus and a three-rice blend. Enjoy! (oh, by the way, if you are wondering about the colour of the sauce in the photos – it had been standing and had started to set, which changed its colour. A few seconds in the microwave will certainly revive it) 🙂

P.S. at the moment I have only seen shallots for sale at Maxima. You will find them by the organic vegetable section.
