Pumpkin and Rududu Bars 🎃🍫

Pumpkins! Pumpkins! Pumpkins!🎃 Wherever you look in my fridge, there are pumpkins… In the freezer – all 4 drawers filled with cubed pumpkin, on a fridge shelf – pumpkin pie, the shelf above – pumpkin soup, and in the side drawer – a whole jar of pumpkin purée. Some sort of pumpkin invasion in my house. 😂 If you are reading this post, you may well be facing the same seasonal glut – a glut of pumpkin.

How many times did I use the word „pumpkin” in that short paragraph?! 😁 Probably an indecent number of times, but that probably explains why pumpkin winds have been blowing through my kitchen lately.😂

And now, on to the pumpkin and Rududu bars.🎃 This is a wonderful recipe for anyone who loves pumpkin and cheesecake and wants to bring the two together. It is a slice, a bar and a little cake all at once. Never mind what a fantastic centrepiece it makes. Wonderful, isn't it?

These bars are made of three layers. Each one is different and brings its own colour to the treat. The first – a biscuit base, which gives the bars crunch and texture; the second – a cheesecake layer of Rududu and cream cheese or mascarpone, all lightness and softness; and the third – a spiced layer of pumpkin and unsweetened evaporated milk, bringing that festive note everyone longs for, the one that reminds you Christmas is creeping in on quiet little steps.😊 Either way, it is a thoroughly autumnal treat, so I can't wait to share the recipe with you!

One of the most important things to watch when making these bars is patience. Don't rush, and give the layers the time they need to cool completely. The baked biscuit layer must be chilled, because pouring the second layer onto it can otherwise loosen it too much. If you don't chill the second layer properly, it can mix into the third pumpkin layer, because it won't be firm enough. And the finished, baked slab must spend at least half a day (ideally overnight) in the fridge so the layers settle and firm up – and only then can you slice it and enjoy!

Decorate the bars to your own taste. Chocolate and cream work beautifully!
