
Wonderful Halloween is coming and my fingers are itching so badly that I cannot sit still! A million ideas for decorating cakes, little cakes and other treats are going round my head.🎃 And I have no fewer ideas for the food I associate with autumn. Pumpkins, carrots, cinnamon, nutmeg, dried fruit, nuts and pears reign over the shelves and the fridge at home – everything that gives off an autumn „vibe”.🍁 Having gone through the autumn ingredients I had at home, I realised I simply had to bake a filling, colourful autumn cake that I HAD to share with you. And of course, a little bonus for me, since I had a cake-as-canvas on which to express my Halloween decorating ideas.👻

Without going on about it, this cake is simply wonderful! Very rich, very colourful, very seasonal. An unbelievably good, light pecan and carrot sponge, autumn-coloured caramelised apricots with carrot, a rich cheesecake layer and a sinful mascarpone frosting – it all comes together into a fantastic autumn jazz.🍂

On the process, I would strongly recommend making the sponge, the caramelised apricots with carrot and the cheesecake the evening before. All of these components need at least 8 hours in the fridge, and ideally overnight. That way the sponge settles and crumbles less when cut, the cheesecake has enough time to set, and the apricots and carrots develop their flavour further. If you prepare everything the evening before, all that's left in the morning is assembling the cake and tasting it!






Having made the frosting for the layers from the quantities given, there should be enough left to give the assembled cake one thin coat. That gives you what is known as a „naked” cake, which you can decorate however your imagination takes you – coat it in buttercream and decorate, cover it in fondant, or simply leave it „naked” and decorate the top with autumn's bounty. The possibilities are endless.🤗
